- Empezamos tamizando la harina, desmenuzamos la mantequilla con los dedos, añadimos el azucar glass, echamos el agua fria y lo mezclamos todo con la harina. Guardamos la masa obtenida en film transparente media hora en frio.
- Mientras haremos la calabaza al horno metida en papillote donde dejaremos en un intervalo de unos 30 a 40 minutos aproximadamente.
- Una vez la masa halla reposado la estiramos con ayuda de un rodillo y cubriendola con papel de horno para que no se nos pegue. Dejaremos caer sobre el molde que vayamos a utilizar y recortaremos los sobrantes metemos en el horno donde pondremos algo de peso para que no suba y coja aire, en este caso yo he puesto garbanzos, meteremos al horno 10 minutos 180º, sacamos quitamos los garbanzos y el papel de horno y volvemos a meter otros 10 minutos. Dejamos enfriar.
- Mientras haremos el relleno donde batiremos los huevo y el azucar moreno en un bol, echamos la calabaza triturada, el Cream, las especias y la nata
- Rellenamos la masa con todo bien mezclado, metemos al horno 50 minutos 180º, sacamos y dejamos enfriar. Decoramos la tarta en mi caso he optado por decorar con un poco de merengue y dandole posteriormente con el soplete para caramelizar el merengue, espolvoreamos con azucar glass y listo.
