- En una cazuela con agua, sal y el laurel ponemos a cocer los garbanzos que habremos tenido en remojo previamente


- Mientras cuecen los garbanzos pelamos, picamos el ajo y lo majamos en un mortero. Reservamos


- Pelamos y rallamos el jengibre. Reservamos


- Limpiamos y picamos en dados pequeños la cebolla, los pimientos y las verduras menos las habas. Reservamos


- En una cazuela ponemos a fuego bajo un poco de aceite y pochamos la cebolla. Cuando esté blanda añadimos los pimientos



- Dejamos pochar y cuando estén blandos añadimos el ajo majado, el jengibre rallado, las especias, pimienta negra recién molida

- Removemos bien y añadimos la leche de coco y el tomate. Mezclamos y dejamos cocer 2-3 minutos



- Añadimos todas las verduras menos las habas y 1 vaso de caldo de verduras.


- Dejamos cocer 10-12 minutos. Escurrimos los garbanzos que ya estarán cocidos y los añadimos a la cazuela junto con las habas


- Dejamos otros 8-10 minutos, rectificamos de sal y emplatamos. Yo le he puesto unas semillas de Sésamo
