  1. Un día antes preparamos con el agua y la sal una salmuera en un recipiente donde entre el pavo y lo dejamos sumergido moviendo de vez en cuando. Para la salmuera mezclamos un buen puñado de sal gorda por litro de agua y lo intentamos disolver lo más posible.
  2. Sacamos el pavo de la salmuera y lo secamos bien. Por el interior metemos el tomillo y pimienta y todos los ingredientes picados que habremos mezclado también con el pan desmigado y una taza de caldo de pollo. Atamos lo mejor posible con cuerda para ello. Frotamos todo el pavo con la mantequilla y salpimentamos.
  3. El horno lo habremos precalentado a 220° y metemos el pavo en la rejilla, debajo dejamos la bandeja con una mezcla de agua, vino y caldo que iremos reponiendo según se vaya agotando sin dejar nunca que se evapore del todo e iremos regando cada media hora con ese jugo el pavo.
  4. A la media hora bajamos el fuego a 170° y colocamos un trozo de papel de aluminio sobre la pechuga y los extremos de los muslos.
  5. Vamos regando levantando el papel y volviendo a colocarlo.
  6. Transcurrido el tiempo comprobamos pinchando el muslo, si sale líquido rosado aún le falta tiempo. Retiramos el papel de aluminio y volvemos a subir la temperatura para darle el último toque de dorado y que quede crujiente la piel. Aprovechamos todo el jugo de la bandeja como salsa y a disfrutar.
